The History of Birch Benders

After graduating from college, Birch Benders founders Lizzi Ackerman and Matt LaCasse moved to Colorado, got married, and discovered a love of cooking. All their experiments in the kitchen led to Birch Benders, a company offering convenient foods that taste good (and are also good for you). With every mix, the brand aims to make pancakes that are “better than at a restaurant and easier than from scratch.”

That’s why its products cover a range of diets like paleo, vegan, and keto, so everyone can enjoy a short stack or a hot plate of waffles with their families.

Birch Benders caters to everyone’s dietary needs. For that reason, the brand isn’t completely gluten-free or only paleo—but there is something for everyone. All of its mixes are processed in a peanut-free facility, but some products to contain tree nuts like almonds, coconuts, and hazelnuts. Being able to choose from vegan, keto, paleo, and gluten-free mixes makes it easy to address everyone’s food preferences, while still enjoying meals together and making memories around the table. The pancake mixes couldn’t be simpler—just add water (or your favorite dairy or non-dairy beverage) and stir.
